This Festive Drink – A Recipe

WHere is an easy take on a drink found on the seasonal menu. This is a party-sized pre-mixed that's loaded with flavours of a festive period, which makes it perfect for your holiday party. Any leftover citrus syrup to use in brunch beverages, puddings, or to make more rounds of bikinis.

Serves 10 guests

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

For the Syrup: Combine all the components in a pan, heat until it reaches a light boil, mixing until the sugar dissolves. Then, take off the stove and leave to cool down entirely. Pour into a clean bottle, close it and store chilled, it will last for about one month.

To make Batch Mix: Combine all the liquids in a large bottle, leave to sit for 60 minutes, then pass it through preferably using a fine cloth, making it fully clarified.

When ready to serve: Add 85ml of the batch mix into a stirring glass containing ice, gently stirring gently for one minute until cold. Filter to a chilled martini glass or equivalent, decorate with a few cranberries and complete it using a quick spritz with the mandarin essence over the drink.
